Ingredients: 1 ripe avocado, 1 Tbsp of lemon juice (or lime juice), 2 Tbsp greek yogurt, 1 spring onion, 1 small can of tuna (in olive oil or natural), Salt and pepper (add as much you like)
How to: Cut the avocado in half and remove the core with a knife. Chop your spring onion into smaller pieces. Take a bowl or plate and mix tuna (without the juice or oil from the can), Greek yogurt, spring onion, lemon juice, salt and pepper together. Fill the mixture into your avocado halfs and plate. For extras you can drizzle some extra virgin olive oil, sprinkle some chili flakes and fresh chopped parsley if you like. ENJOY!
