Ingredients: 3 Eggs, 1/2 chopped belt pepper, 1 Tbsp Feta Cheese, 1 Tsp of fresh chive, 2 Tbsp Olive oil, Salt and pepper, 1 handful of mixed salad, 3 Cherry Tomatoes
How to: Take a bowl, crack the eggs and add some salt and pepper- give it a proper mix. Heat up the pan with 2 Tbsp olive oil on medium heat, add belt pepper and cook until slitty browned on a medium heat (mix between)- than add eggs and let them cook for about 1 minute with the lid on. Spread feta chees and fresh chive- than put the lid on for 1 minute and continue cooking. Once the top is fully cooked and there is no raw egg visible, flip omelette in half and slide it carefully on plate with help of spatula.
Serve with Side Salad and cherry tomatoes.
