Starter- Caprese Salad

Servings: 2 Portions

Time: 10 Minutes

Ingredients: 4 Large tomatoes, 2 Mozzarella Cheese, Fresh Basil, Balsamic Vinegar, Balsamic Vinegar reduction (optional), Olive oil, Salt, Pepper

How To: Slice tomatoes and mozzarella cheese. Take a serving plate and start by layering tomatoes, cheese and basil. Drizzle with some extra virgin olive oil, Balsamic vinegar, salt, pepper and balsamic vinegar reduction. ENJOY!

Main Course- Shrimps al Limone

Servings: 2 Portions

Time: 15 Minutes

Ingredients: 350 g Shrimps/ Gambas, 4 Tbsp Olive Oil, Salt, Fresh parsley, 1 Lemon, French Baguette

How To: Wash the shrimps under cold running water. Dry them in a paper towel and place in a bowl, add juice of 1 Lemon and salt- mix well and let sit for 5 minutes. Preheat the pan with olive oil on a medium heat, add shrimps with the marinade and cook for 5 minutes – mix and turn the shrimps around so they all get cooked from both sides. Serve with some freshly chopped parsley and Fresh French Baguette.

Dessert- Mango Ice Cream

Portions: 2 Servings 

Time: 5 Minutes

Ingredients: 1 1/2cup Frozen Mango, 150 ml Milk, 2 Tbsp Agave or other natural sweetener, 2 Tbsp Full Fat Yoghurt

How To: Add all ingredients into food processor or blender and blend until the consistency is creamy.

Tip: Serve with fresh or frozen mango, you can also add freshly sliced orange and sprinkle some chopped macadamia or shredded coconut on the top. Enjoy!
